In many ways the food at the Old Tubac Inn is as much a reflection of its southwest heritage as the
atmosphere of the building itself.
Each of the dishes are plentiful, made fresh to order, and contain
the flavor and the attitude for which we're known. We refer to our food as "Sonoran Saloon Cuisine,"
rich in an outdoor flavor that comes from a process of wood smoking done right at the bar.
The sweet smell of mesquite can be detected in the baby back ribs, which are so tender the meat falls
from the bone. The carne Adovada is the result of mesquite smoked pork simmered in a vibrant red chili
sauce. The pulled pork sandwich, every BBQ lovers dream, is also slow smoked then bathed in
rich BBQ flavor. In fact, all the dishes are painstakingly prepared, including fresh rotisserie
chicken, a delightfully spicy grilled chicken in a chipotles cream sauce, gorgeous Angus Beef Steaks,
and a southwestern Caesar salad that is served in its own oversized tortilla bowl.
But nothing comes
close to the unique flavor of the green chili stew, a sultry mixture of smoked pork, hatch green chilies,
fresh roasted corn, black beans, and potatoes. Combined with a medley of untold spices, the dish is a remarkable
combination of Southwestern flavor and flair.
